I’m glad to be posting a menu again after being sick last week and not eating or getting to the grocery store. Today I brought the kids to my mom’s to enjoy her pool, but I had to stick to the plan. The “plan” being that I have to get my menu planned and grocery list done this afternoon. I thought I would take an opportunity while over here to look through one of her cookbooks that I really like, and get some new dinner ideas for this week.
Here is what I came up with:
Tonight~ Burgers, chips, and corn on the cob (I bought a pound of turkey and will be fixing myself a turkey burger along with the regular hamburgers to see if it’s something the rest of the family might try)
Tuesday~ Grilled Bruschetta Chicken and Grilled Veggies (I know I just fixed this 2 weeks ago, but it was soooo good and according to Jenny, it only has 4 Weight Watchers points)
Wednesday~ we have church so I’ll probably just fix sandwiches
Thursday~ Green and White Lasagna Bundles (new low fat recipe) and Salads
Friday~ I am hosting a crop
Saturday~ Teriyaki Chicken (new low sodium recipe for the marinade) and Fried Rice
Sunday~ Leftovers or else take me out for dinner

I fixed the Grilled Bruschetta Chicken last week too. It was so good.
Be sure if you are counting your points be sure you pay attention to the serving size. The recipe calls for 4 small boneless skinless chicken breast halves (1 lb.). That is a lot smaller than the chicken breasts I typically find in a package at the supermarket.
