I have a few minutes before the dinner bell goes off and since I was asked to post more of my recipes I will take this opportunity to do so while my kids are (sort of) playing in the basement. By that I mean, I heard screaming a little while ago, but no one called specifically for ME, so I figure they worked it out themselves. What a relief!
Now tonight I am fixing Oven Swiss Steak. This an oldie but a goodie in my house growing up. I think it used to be my grandma’s recipe, and I still like fixing it from time to time. It’s good with a side of baked potato and green beans. And tonight, for dessert, is Blueberry Pound Cake. (If you don’t try any other recipe I post, you gotta try the pound cake!)
Now for the Oven Swiss Steak:
1 1/2 pounds beef round steak, 3/4 inch thick
1/4 cup flour
1 tsp salt
1 (16 oz) can stewed tomatoes
1/2 cup chopped celery (I never put this in)
1/2 cup chopped carrot (I use baby carrots, not chopped, because I hate chopping!)
2 tbsp chopped onion (did you know you can BUY chopped onion in the freezer section?)
1/2 tsp worchestershire sauce
1/4 cup shredded american cheese
Cut meat into 4 portions. Mix flour and salt and pound into meat. Set aside remaining flour. Brown meat in small amount of oil. Place browned meat in a shallow baking dish. Blend remaining flour with drippings in skillet. Add all other ingredients except cheese, and bring to a boil, stirring constantly. Pour over meat. Cover and bake at 350 degrees for 2 hours or until tender. Top with cheese, and return to over until it melts.
***Note: I have been posting heart healthy recipes. This is probably not one of them. But it is really, really good tasting!!!

And I’m going to try the blueberry poundcake. I’m making blueberry layer cake this week. We love poundcake, and I think blueberries can only make it better right?
