It’s that time of the week again. Sitting down with recipe books and trying to add some variety to the dinner menu.
Monday: Tonight we are having the meatloaf, cucumber salad, and baked beans we were supposed to have last Thursday. Jeremy called me that afternoon to see if we could all go fishing at his dad’s after work. My father in law picked up fried chicken on his way, so I was off the hook! Yay!
Tuesday: Chicken Salad. (My mom has an awesome recipe for this, I will try to post it tomorrow if I have time).
Wednesday: Leftovers
Thursday: Breakfast for dinner. Jeremy and the kids all LOVE breakfast for dinner. Don’t know yet what it will be. Either pancakes with strawberries and bacon, or eggs, toast/biscuits, and bacon and fresh fruit.
Friday: Chicken fajita salads, quesedillas for the kids, and spanish rice.
Saturday: We are having a company party at our house, so we are probably grilling out.
Sunday: Mom’s day of rest. If you can find it, you can eat it. If you can’t find anything, you will not starve to death in one day. See you tomorrow! :)

I love chicken salad–I make mine with grapes and pecans or walnuts! Hope you post it!
