Alright, I’m back on this week with a plan. I am doing the May Weightloss Challenge which provides another kind of challenge for me when cooking dinner. My hubby wants his red meat and potatoes, my kids want chicken nuggets and mac-n-cheese (yes, EVERY night), and I couldn’t really care less about dinner. A sandwich or bowl of cereal would be fine with me. More on this dilemma tomorrow, but for today:
Monday: leftovers from Mothers Day and my Sister’s birthday cookout
Tuesday: Roast simmered with potatoes and carrots, creamed corn, and yeast rolls
Wednesday: Roast beef sandwiches, baked beans, and blueberry salad
Thursday: Spaghetti and house salads
Friday: I’m not planning on cooking, but we are going strawberry picking in the morning, so I plan to let the kids help me make a Fruit Pizza for “dinner”
Saturday: Fish and Veggies on the grill
Sunday: I claim the Sabbath!

So much for my first week. I ate really well, but the scales aren’t showing much! Your menu looks great.
Your menu looks great! That is always a hard one for me when I’m trying to lose weight–eating well but having to cook what the family
